Chocolate and avocado mousse

  • 20 ml Soya cream
  • 230 g Banana
  • 325 g Avocado
  • 40 g Cacao powder
  • 40 ml Maple syrup
  • 100 ml Boiling water
  • 2 tsp Vanilla extract


  • Scoop out the flesh of the avocado(s) and add to a food processor with the banana. Mix this on a medium speed for at least 5 minutes.
  • In a separate mixing bowl, combine the water, cacao powder and vanilla extract to create a smooth paste.
  • Pour this into the food processor and mix for a further 2 minutes.
  • Next, add the soya cream to the food processor and mix for around 8 minutes, or until smooth.
  • Spoon the mixture into mini ramekins or espresso cups and serve!
