Vegan courgette balls

These little balls remind me of summer, with the hint of mint shining through. Serve as a mezze or add them to a tomato sauce as a meat-free meat ball.

  • 400 g Courgettes
  • 200 g Puy lentils
  • 10 g Garlic
  • 5 g Coriander
  • 3 g Mint
  • 1 Chilli (optional)
  • 8 g Tahini
  • ½ Lemon (zest and juice)
  • 25 g Ground almonds
  • 5 g Chia seeds

How to make

  • Grate the courgettes and squeeze out all of the water.
  • Finely chop the garlic, coriander, mint and chilli
  • Place all of the ingredients into a large mixing bowl and combine.
  • Shape the mixture into balls and place them on a baking tray lined with parchment.
  • Brush the balls with a little bit of avocado oil.
  • Place the tray in the oven at 180°C for 20 minutes.
