Ratatouille

This a staple in our house – winter or summer! It can be paired with so many different foods and works well as a warming lunch to take to work too.

  • 400 g Tomatoes
  • 300 g Aubergine
  • 200 g Red pepper
  • 140 g Courgette
  • 150 g Green pepper
  • 130 g Red onion
  • 120 g Leek
  • 4 cloves Garlic
  • 100 g Sundried tomatoes
  • 1 tsp Dried mixed herbs
  • 5 sprigs Thyme
  • 1 tsp Dried oregano

How to make

  • Chop all of the vegetables into chunky similar-sized pieces. Crush the garlic.
  • Add 6 tablespoons of water to a large heavy-based pan on a medium heat.
  • Add all of the chopped vegetables into the pan, along with the garlic, thyme, and dried herbs and stir.
  • When the pan begins to bubble, reduce the heat and allow to simmer with the lid on.
  • Place the sundried tomatoes with a little bit of water into a food processor and combine to make a paste.
  • Add the paste to the simmering pan and stir well. Do not add any more water, unless the vegetables are sticking to the bottom.
  • Leave to simmer for 20-30 minutes, until the vegetables have all softened.
