Raspberry and Lemon Cupcakes

They are light in texture but the flavours really shine through and are just a delight. One just isn’t enough so make sure you make plenty!

Ingredients How to make

Ingredients

  • 200 g Ground almonds
  • 100 g Almond butter
  • 90 g Maple syrup
  • 150 g Raspberries
  • 2 Eggs
  • 2 tsp Baking powder
  • 1 Lemon (juice and zest)

How to make

  • Using a food processor with paddle attachment, beat the eggs, almond butter and maple syrup together for two minutes on a medium speed.
  • Add the ground almonds and the baking powder and combine for a further minute.
  • Then add the lemon juice and zest. Mix again for one minute.
  • Finally, add the raspberries and mix this for another minute.
  • Spoon the mixture evenly into prepared cupcake cases and place them in the oven at 180°C for 10-12 minutes witha fan assisted oven.

Optional

  • Make a coulis to drizzle over the cupcakes after they are cooked and cooled by mixing raspberries, icing sugar and lemon juice and zest together!
